~ CREPES ~These are probably one of the most requested things that I make at the Adaberry Inn! I have repeat clientele and it is such a nice feeling when a guest will ask "Will you please make me your crepes?" YES! These are also great to make for dessert if you have company!
1 1/2 cups of Organic Flour, sometimes I use whole wheat
1 tsp. of pure vanilla extract
1/2 tsp. of sea salt
1/2 tsp. of baking powder
2 tbsp. of sugar, I use coconut sugar
2 tbsp. of oil
2 cups of milk (I use a little more depending on the consistency, you want it to be a thinner batter but not too thin.)
My #1 best friend in the kitchen is my counter top griddle! You can get one anywhere. I hunt around for them as I like mine to be a wider deeper griddle & not the long skinnier types. Do not put oil on them & do not wash them with soap! I use real butter and then simply wipe them down with a paper towel after each use. I also do not cook eggs on them, I do those in a separate sauté pan.
Butter your griddle, pour out 1/2 cup of batter and pick your griddle up and let the batter run to the sides to form a flat thin circle. Let bubble and flip. They will cook quickly & you want to not have your griddle heat too high.
- Fill with Greek God's Honey Yogurt
- Dark luscious berries & I use bananas for filler
- Fold over & sprinkle with powdered sugar!
